调配
62%歌海娜,葡萄一部分产自位于Palestor区和BoisDauphin区之间的园地,另一部分来自位于Grand Pierre、Rayas和Pointu之间的园地,以及Cabrières、Boursan和Pied Long等地。 18%慕合怀特,来自Mascaronnes和Boursan区 13%西拉,来自Le Parc和Cabrières区 5%神索,来自Pierre à feu(火石)区 2%其他葡萄品种。  极具教皇新堡特色的土壤(黄沙和红沙,红色粘土和石灰质粘土,卵石土质),并且含沙量较高。 葡萄藤的平均年龄在70年以上
葡萄酒酿造与陈化
在混凝土酒槽中发酵。去除未成熟的果梗。浸泡超过4周。缓慢萃取。  歌海娜在旧的大酒桶foudre,慕合怀特和西拉在1到3年的旧桶demi-muids,神索在搪瓷面钢酒桶中培养。  培养平均时间为18个月。仅在装瓶前才过滤。

严格剪除赘芽。绿色采摘。收割季节全手工采摘,进行严格的双重甄选。

来自巴塞罗那的艺术家CarlosPazos是2004年西班牙国家造型艺术大奖(Prix National des Arts plastiques d’Espagne)获得者,对法国文化情有独钟。他热爱生活,卓尔不群,具有敏锐的洞见力,一年中大部分时间都在法国度过。作为Barrot家族的挚友,他对庄园的美酒心怀一份难以割舍的情愫,特别创作一幅绘画作品(完整呈现于酒瓶标签上),来表现它神秘却又充满激情的乐趣。

调配
50%歌海娜,来自“白土”(Terres Blanches)区的坡地葡萄园,百年老藤,成熟时间较早;它赋予葡萄酒细腻精致,优雅柔滑的一面。  50 %西拉,来自Cabrières区,它赋予葡萄酒强劲口感,果香丰富,色泽动人,并略带可可香气。
葡萄酒酿造与陈化
两种葡萄汁液混合后在同一混凝土酒槽中发酵。缓慢萃取:发酵前西拉进行不到1周的低温浸泡,以便更好地析出清新果味。 在酒槽中浸泡4周。培养18个月,其中一部分在勃艮第木桶里,另外一部分在酒槽中培养。
